Rooting is for Android as to jailbreaking is for iPhone iOS. Rooting is the process that allows previliged access to Android's Linux subsystem. You can even overclock your Android device with overclocking apps after rooting your device. This types of apps help you to set minimum CPU speed for your CPU so that your device always has higher CPU speed. Normally, CPU speeds fluctuate with the usage of apps. Sometimes apps may require higher frequency of CPU but the CPU is running at a low speed. Then you can use it to overclock. For e.g. if your CPU max. speed is 600 Mhz., then it helps your device to run in that speed always as you customize it to.
Recently some manufacturers have added security features to their devices at the hardware level as to prevent their retail android devices being rooted. They have a security boot-loader that will put the phone in recovery mode if unsigned firmware is loaded into the device. But every problem has a solution. So this problem was defeated 6 days after the launch of Motorola Droid-X which has the same boot-loader for security. Now this phone can be rooted.
